  • 2 tbsp. semolina
  • 1 ripe tomato
  • 1 half-glass of milk immediately
  • 1 C. olive oil
  • salt.


In a saucepan, bring the milk and the same amount of slightly salted water to a boil. Discard the semolina in rain and cook for 10 minutes over low heat. Meanwhile, scald the tomato for 1 minute, peel it, seed it and cut it into cubes. Cook them in the oil for 5 to 6 minutes, stirring constantly. Mix and pour on the semolina. Serve hot.
