For 4 people :

  • 150 g of rice
  • 350 ml of vegetable broth
  • 2 red peppers
  • 1 clove of garlic
  • 2 lawyers
  • 100 g rocket
  • 1 finely chopped pepper
  • 1/2 lemon juice
  • 3 tablespoons of olive oil
  • salt
  • mill pepper
  • 60 g yoghurt


Bring the broth to a boil and pour in the rice. Let cook covered over low heat for 20 minutes. Let cool.
Wash the peppers, cut them in half, remove the seeds and cut them finely.
Peel the garlic and chop it.
Peel the avocados, cut them in half, remove the stones and slice the flesh. Sprinkle with the lemon juice.
Wash and squeeze the arugula. Chop it roughly.
Mix the rice with peppers, garlic, avocados, arugula, chilli.
Prepare the sauce with olive oil and yoghurt. Add salt and pepper. Pour the sauce over the salad and mix again.
